Sunday night usually demads my good old-fashioned fridge-dump cous cous, but this time, I think my odds and ends harmonized well enought to actually call it a ‘dish’.  I made some roasted garlic and olive oil cous cous (from the box, before you get too impressed), and tossed in artichoke hearts, chick peas and some eggplant that I roasted for 10 minutes in the oven.  I have the leftovers-of-the-leftovers today for lunch, and I’m definitely looking forward to it.
