After a most heinous day at work, a one-martini dinner (yes, one, I’m a little lady and thusly don’t need much to become inebriated) was pretty much a necessity.  Easy to make, but difficult to master, I recommend the Ketel One martini, straight up with olives.  Lots of olives.
